Gluten-Free Brownies

Ingredients

  • 1/3 cup cornstarch
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 12 oz. semi-sweet chocolate chips
  • 6 Tablespoons unsalted butter, diced into 1 Tablespoon pieces, plus more for baking dish
  • 3/4 cup sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Ingredients

  • 1⁄4 cup butter, melted
  • 3 Tablespoons sugar
  • 2 eggs, room temperature
  • 1⁄2 cup plus 1 Tablespoon sour cream (can lowfat or nonfat)
  • 1⁄2 cup milk (can be lowfat or nonfat)
  • 1 cup Cup for Cup flour blend
  • 2⁄3 cup yellow corn meal
  • 2 teaspoons gluten-free baking powder
  • 1 teaspoon salt (I use Kosher salt)

Directions

Heat oven to 425°F. Combine butter and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs; mix well. Stir in sour cream and milk. Reduce speed to low; add all remaining ingredients. Beat just until mixed.

Pour batter into greased 8-inch square baking pan. Bake for 18 to 22 minutes or until golden brown and toothpick inserted in center comes out clean. Serve warm.

Gluten-Free Pizza Crust

A 7-ingredient gluten free pizza crust that requires 1 hour from start to finish and rivals any pizzeria style pizza crust.

INGREDIENTS
3 cups gluten free flour blend* (1 cup brown rice flour, 1 cup white rice flour, 1 cup tapioca flour, 1/2 tsp xanthan gum)

  • 1/2 tsp baking powder
  • 3 Tbsp sugar, divided
  • 1 Tbsp yeast
  • 1 1/4 cup warm water, divided
  • 1 Tbsp olive oil

 

INSTRUCTIONS
  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine yeast and 3/4 cup warm water – about 110 degrees. Too hot and it will kill the yeast! Let set for 5 minutes to activa
